Coconut and Paprika Pork Stroganoff with Broccoli Rice | Mindful Chef
This scummy little masterpiece from Mindful Chef offers low carb, high protein, and aside from anything else, doesn’t require me to attack it with cauli rice, because I got to actually make my own BROCCOLI rice!! How about that?!
The flavours of the stroganoff itself are rich, hearty, and complimented so well with the light, zesty broccoli as it’s counterpart. I love the use of the coconut cream for the stroganoff base, as actually I’ve never used it in cooking before, so this was such a welcome introduction!
An excellent meal for an evening dinner party to show off what sounds like a very complex and fancy recipe effortlessly to your guests, or likewise, a delicious and comforting lunch which is filling and warming, yet doesn’t rely on starches and heavy carbs to make you feel cosy inside.
Ingredients to feed 2 people (halve if eating solo):
Finely chop the mushrooms, red onion, garlic, parsley, all in one big preparation swoosh. Set the parsley and mushrooms to one side
Slice the pork loin steaks into thin strips. That’s just about it for prepping, you know! All but the broccoli, but we’ll get to that later on. Before the cooking begins though, grab a jug and melt the creamed coconut into 100ml of boiling water.
